Black Forest hunter’s sauce with 250g of mushrooms in 15 minutes

1. Sauté the base

Heat a little butter or oil in a pan.
Add the diced onion and the diced smoked ham (or bacon).
Cook over medium heat until the onion softens and the ham starts to brown lightly.
This creates the aromatic base of the sauce.

2. Add the mushrooms

Slice the mushrooms, keeping the pieces slightly chunky for a more rustic texture.
Add them to the pan and let them cook until they release their water and begin to reduce.

3. Add the tomato element

Stir in the ketchup or tomato paste.
Let it cook for 4–5 minutes to lightly caramelize and build deeper flavor.
