Tomato sauce with 250ml of vinegar – I make it every year.

This rich, versatile tomato sauce is a recipe I come back to every year. It’s the perfect base for pasta, stews, and so much more.

Yields: A large batch (can be halved)

Ingredients:

  • 4-5 kg ripe tomatoes

  • 8 large yellow onions

  • 1 celery root (celeriac), peeled

  • 3 g fresh ginger, grated

  • 5 bay leaves

  • 250 ml vinegar

  • Juice of 1 lemon

  • 3 tbsp sugar

  • 2 tsp black pepper (or to taste)

  • 3 tsp salt (or to taste)

  • 1 tsp sweet paprika powder
