This rich, versatile tomato sauce is a recipe I come back to every year. It’s the perfect base for pasta, stews, and so much more.
Yields: A large batch (can be halved)

4-5 kg ripe tomatoes

8 large yellow onions

1 celery root (celeriac), peeled

3 g fresh ginger, grated

5 bay leaves

250 ml vinegar

Juice of 1 lemon

3 tbsp sugar

3 tsp salt (or to taste)

1 tsp sweet paprika powder
