-
2 medium cooked potatoes (baked, roasted, or even boiled)
-
1 cup chopped broccoli (fresh or thawed from frozen)
-
1/4 cup sour cream or plain yogurt
-
2 tbsp milk or cream
-
1 egg
-
1/2 tsp garlic powder
-
Salt & pepper to taste
-
Breadcrumbs or crushed crackers for topping
-
Optional: chopped green onions, leftover bacon bits, herbs
Instructions:
-
Preheat the oven to 375°F (190°C) and lightly grease a small baking dish or ramekins.
-
Add the broccoli (lightly steamed or sautéed if raw) and mix in the shredded cheese, sour cream, milk, egg, garlic powder, salt, and pepper. Stir until combined.
-
Pour into the baking dish and spread evenly. Sprinkle breadcrumbs or crushed crackers over the top for crunch.
-
Bake for 25–30 minutes, or until golden and bubbling on top.
-
Cool slightly, then serve warm. Add a dollop of sour cream or hot sauce if you’re feeling fancy.
Why This Works
