– 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-size pieces
– 1/4 cup all-purpose flour
– 1/2 teaspoon paprika
– Salt and black pepper, to taste
– 1 small onion, diced
– 1 cup sliced mushrooms
– 1 red bell pepper, chopped
– 2 garlic cloves, minced
– 1 1/2 cups chicken broth
– 1 cup frozen peas and carrots
– 1/2 cup heavy cream
– 1/4 cup dry sherry (optional)
– 1/2 teaspoon dried thyme
– 1/4 cup fresh parsley, chopped for garnish
