In a bowl, mix the pork sausage with a pinch of salt and pepper. Make sure the sausage is well combined.
Divide the sausage into 6 equal portions.
Wrap the eggs:
Take a portion of sausage and stretch it out in your hand.
Gently wrap a hard-boiled egg in the sausage, making sure it is completely covered.
Repeat the process for the remaining eggs.
Coat the Scotch Eggs:
Prepare three plates: one with flour, one with beaten eggs, and one with breadcrumbs.
Dredge each Scotch Egg in the flour, then in the beaten egg, and finally in the breadcrumbs, pressing gently to adhere.
Repeat the process for all the Scotch Eggs.
