For the Packets:
- 1 lb boneless, skinless chicken, cubed
- 1 medium red bell pepper, sliced
- 1 medium onion, sliced
- 2 cups fresh pineapple chunks
- Salt & pepper, to taste
Optional Garnish:
- Fresh cilantro or green onions, chopped
- Sesame seeds, for topping
How to Make It
- Marinate Chicken โ Whisk together BBQ sauce, soy sauce, honey, olive oil, garlic, and ginger. Coat chicken and refrigerate for at least 30 minutes.
- Prep Foil Packets โ Preheat grill to 375ยฐF or oven to 400ยฐF. Divide marinated chicken, bell peppers, onions, and pineapple into four foil sheets. Season with salt and pepper.
- Seal & Cook โ Fold packets tightly, leaving space for steam. Grill for 15โ20 minutes, flipping halfway, or bake for 20โ25 minutes until chicken is fully cooked.
- Serve โ Carefully open packets, garnish with cilantro or green onions, and enjoy with steamed rice or crusty bread.
