Instructions

  1. Prepare Oven and Pan: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil, or lightly grease a 9×5 inch loaf pan.

  2. Make the Meatloaf Mixture: In a large bowl, beat the eggs. Whisk in the milk and the crushed Ritz crackers. Let the mixture sit for a minute so the crackers can soften. Stir in the chopped onion, shredded cheese, salt, and pepper.

  3. Combine with Beef: Add the ground beef to the cracker mixture. Using your hands or a fork, mix gently but thoroughly until all ingredients are evenly combined. Avoid overmixing for a tender loaf.

  4. Form the Loaf: Transfer the mixture to your prepared pan and shape it into a firm, oval loaf, about 9 inches long.

  5. Initial Bake: Place the meatloaf in the preheated oven and bake, uncovered, for 30 minutes.

  6. Prepare the Glaze: While the meatloaf bakes, in a small bowl, stir together the ketchup, brown sugar, and mustard until smooth.

  7. Add First Layer of Glaze: After 30 minutes of baking, remove the meatloaf from the oven. Spoon about half of the glaze evenly over the top.

  8. Continue Baking: Return the meatloaf to the oven and bake for another 10 minutes.

  9. Add Final Glaze: Remove the meatloaf and spread the remaining glaze over the top. Return it to the oven for a final 5-10 minutes, or until the internal temperature reaches 160°F (71°C).

  10. Rest and Serve: Let the meatloaf rest for 5-10 minutes before slicing. This allows the juices to redistribute, making it easier to slice and more flavorful.
