Apple Fritter Breakfast Casserole

Instructions

1. Prepare the Oven and Dish:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.

2. Assemble the Base:
Place the cubed croissants in the prepared baking dish, spreading them into a uniform layer. Set aside.

3. Make the Spiced Apple Filling:

  • In a large skillet over medium-low heat, melt the butter. Add the brown sugar, cinnamon, and nutmeg. Whisk until the sugar has dissolved and the mixture is smooth.

  • Add the diced apples and cook for 5-7 minutes, stirring frequently, until the apples begin to soften.

  • In a small bowl, create a slurry by stirring the cornstarch and water together until smooth. Pour the slurry into the apple mixture and stir continuously for 1-2 minutes until the sauce thickens.

  • Remove the skillet from the heat and stir in the lemon juice. Spoon the entire apple mixture evenly over the layer of croissants.

4. Create the Custard:
In a medium bowl, vigorously whisk together the ½ cup heavy cream, applesauce, eggs, 1 ½ teaspoons vanilla, and ½ teaspoon cinnamon until smooth and fully combined.

5. Assemble and Bake:
Slowly and evenly pour the custard mixture over the apples and croissants, ensuring everything is moistened. Gently press down any dry croissant pieces with a spatula.
Bake for 35-40 minutes, or until the top is golden brown and the center is set.

6. Ice and Serve:

  • While the casserole bakes, prepare the icing: In a small bowl, whisk the powdered sugar, 2 tablespoons heavy cream, and ½ teaspoon vanilla until a smooth, drizzle-able consistency forms. Add more cream, a teaspoon at a time, if the icing is too thick.

  • Let the casserole cool for at least 5 minutes after removing it from the oven. Drizzle the vanilla icing over the top. Serve warm.

Chef’s Notes:

  • Apple Selection: Using a firm, tart apple like Granny Smith provides a lovely contrast to the sweet ingredients, but any good baking apple will work.

  • Make-Ahead: This casserole can be assembled the night before. Complete all steps through pouring the custard, then cover tightly and refrigerate. Let it sit at room temperature for 20-30 minutes before baking as directed.

  • Storage: Leftovers can be covered and refrigerated for up to 3 days. Reheat individual portions in the microwave.
